Bourbon-Maple Sweet Potatoes
2 lbs sweet potatoes, cut 1/2-inch dice
1 medium onion, cut 1/2-inch dice
2 tbs. vegetable oil
2 tbs. unsalted butter
1/3 cup Bourbon-Maple Mix (recipes follows)
1/8 tsp. cinnamon
1/8 tsp ground allspice
salt and pepper to taste
Microwave sweet potatoes in a covered dish for 5-minutes on high. (This speeds the cooking process) Add butter and vegetable oil to a sauté pan over medium heat. Add potatoes, onions, cinnamon, allspice, salt and pepper and cook till desired doneness. Add bourbon-maple mix and cook to reduce and glaze the sweet potatoes, serve.
10-ounces Good Quality Bourbon
10-ounces Grade A real maple syrup
Mix the two together and leave in the refrigerator for 2-weeks.
